I found a stable build of LineageOS 14.1 (which is based on Android 7.1.2) for the p5100.
I transferred the .zip file onto the tablet's internal storage via USB while in TWRP mode.
On the tablet screen, I tapped Install, selected the LineageOS zip file, and swiped the slider to flash it.

Open Odin3 as Administrator on your PC.
Connect your tablet to the PC via USB. Odin should show an “Added!” message and a blue (or yellow) box in the ID:COM section.
Click the “AP” (or “PDA”) button and select the twrp-3.4.0-0-espresso3g.img.tar file.
Crucial: In Odin, uncheck “Auto Reboot”.
Click Start. When the flash is complete (green “PASS!” message), disconnect the USB cable.

Upgrade Procedure (Overview) Installing a custom ROM will wipe all data on your device. Ensure you have backed up important files.

With tablet in TWRP, connect to PC.
Copy the ROM .zip and GApps .zip to the MicroSD card (or internal storage).
Safely eject from PC.
